
Taco Salad with Grilled Chicken Breast and Creamy Yogurt Dressing
I just made a delicious, easy, and healthy version of a taco salad for dinner, here’s how to make it.
You will need:
- multi grain tortillas
- 1 ripe avocado
- 1 tomato
- spring onions
- Greek yogurt
- lime
- grilled red bell pepper
- cumin
- coriander leaves
- chicken breasts
- crunchy lettuce
- salt & pepper
- chili flakes
For the creamy dressing mix 1/4 of a cup of yogurt with a tablespoon of olive oil, lime juice, coriander, chili pepper flakes, salt and pepper.
Season chicken breasts with salt and pepper and grill until no longer pink in the middle.
Assemble all the other ingredients and add the grilled chicken.
Serve with some multi grain tortillas.
